Cream of Shitake Mushroom Soup

This is a new one on me never made this before, just using whatever I have in my frig. So here we Go.

Boil all the ingredients

Blend and add a little light cream 

Boil on stove my large pot.
2 small packs of fresh shitake mushrooms.(cut stems off)
5 small petite carrots.
1 clove of garlic (optional)
3 small pieces scallion onion the white end.
1 small sliver of red onion.
2 extra small pieces of fresh Parsley and Dill
1 table spoon of butter sprinkle a little of salt and pepper
2 packs of Goya Pollo chicken season broth
Boil the above for about 20 minutes until tender.
Whisk in 1 table spoon of flour.

Let cool then blend in the blender to mix all the above.
Add 1 cup of milk
add a little of light cream per serving as desire.

Serve with crackers or dip a piece of french bread.

Shrimp and Mei Fun Hot and Spicy

Want your nose to run well here we go.
My tongue is on fire and I did not rev it up on the hot stuff.

Christmas left overs shrimp cocktail well here I go again to make my own recipe.

In a pan fry the already cooked shrimp in wok oil, a little of Tokyo Teriyaki grill sauce, Kikkoman Teriyaki Sauce, Louisiana Hot sauce (tobaso) sprinkle a little of red crushed Pepper spice.

Mix together for the hot flavor for the shrimp to absorb the hot mixtures.

Boil water adding 1 pack of  Pollo chicken flavor broth pack add parsley add the Mei fun noodles until cooked.
Drain place in a serving plate top with the Hot and Spicy shrimp include the sauce.

Lasagna with Cheese

Today I am making a cheese Lasagne using Barilla four layer No-Boil lasagne noodles.

Polly-o ricotta cheese 2 lbs. and a block of Polly-o mozzarella 1 lb, grated Parmesan cheese.
Sauce Tuttoroso about 1 and 1/2 jars and fresh parsley. (from my garden)  and spices.


Take a large bowl and add 2lbs of Ricotta Cheese add spices. Sprinkle garlic powder, onion salt, Italian seasoning, parsley my dried from the garden and I also went out side a picked a small handful of fresh parsley too and  don't forget the dill mix everything in the ricotta cheese together.


In a glass baking pan spray oil and add a little olive oil drizzled on top and then add a little bit of the red sauce.

Then start your layers of four and over lap them they will expand when baking plus over lap to the edges your sauce to cover the noodles. I added a little of fresh parsley from my garden that I had sun dried just on two layers.

1. spray pam, add a little olive oil  a a little of red sauce on the bottom of the glass baking pan.

2. layer 4 uncooked sheets spread ricotta, red sauce and sliced mozzarella top with sauce sprinkle a little Parmesan cheese and remember to cover the edges of the noodles.

3. layer 4 uncooked sheets of noodles spread ricotta, red sauce, sprinkle a little of Parmesan cheese (no mozzarella leave the remainder for the very top layers.

4 Layer the last 4 sheets of noodles on the top spread red sauce the remainder of sliced mozzarella and sprinkle a little of Parmesan cheese.

Cover with foil lightly (above the noodles not touching)
bake at 375 for 40 to 50 minutes until the cheese melts.
Let rest for 15 minutes before cutting.

Then your good to go.

Remember do not Boil these noodles. They are a no stove top cooking noodle.

You can change your spices add Mrs. Dash a little and If you like dice very small some mixed baby peppers, spinach and even yellow squash. You can make this cheese lasagna into a veggie lasagna adding all your favorite veggies and yes even fresh tomatoes.

Meatball sandwich

Finished meatballs just add red sauce when ready to eat

My fresh garden parsley just picked today
Take a large round mixing bowl and place two or three slices of bread pour milk on top of the bread to absorb the milk.
Take a package of 1 lb of chopped meat and put into the mixing bowl.
Season with a sprinkle of
Salt or sea salt or no salt it's up to your taste
sprinkle a little pepper, Italian seasoning, garlic powder, onion salt, dill and parsley a little more than a sprinkle.
Add 2 tables spoons of Parmesan cheese and sprinkle a little of bread crumbs.
Hand mix and roll into meat balls.
Drizzle a little of olive oil on a glass baking pan and place the meatballs in the pan.
Preheat oven 450 and bake until meatballs are firm. About 20-25 minutes.

You can add your favorite pasta sauce or your own home made sauce.
Today I am making a meatball sub for my son.

Shrimp Ricotta Parmesan on angel hair pasta

Everyone loves food you pay for and not what mom makes.
Fooled you boys mom made this one.


Just heat and eat and that is just what they did.


Today I made shrimp ricotta parmesan cheese on angel hair pasta. Easy and quick plus I fooled my sons
using a container I reused from foods to go.

I used wok oil in a fry pan and fried shrimp then set aside.
Boil angel hair pasta as directed until tender. I used 1/2 pack split in half of Botticelli fine pasta for this one.
Mix the pasta with about 2 to 3 tables spoons of ricotta and with pasta sauce I used Tuttorosso marinara.

Place pasta in the container then add the shrimp, tails off, add a little more pasta sauce on top.
Then sprinkle the topping with shredded mozzarella cheese.

Heat and Eat.
Sprinkle grated cheese if you like.

Reuse your containers and fool your kids to eat your creations.

Meat Pie with corn and mashed potatoes

Top the pie with mashed potatoes then bake



I peeled a 5 lb bag of white potatoes cut and boiled until tender drain and add 2 table spoons of mayo and one table spoon of butter. With an electric blender add 1 cup milk or a little more into the potatoes and blend until creamy.
Pan fry 1 lb of chopped meat and drain the oil.
I used Mrs. Smith's two  9" deep dish pie crust and started to layer my meat pie.
On the bottom of each pie dish divide the meat into each shell.
Then add a very light sprinkle of onion salt, garlic powder, Italian seasoning and parsley flakes.
The middle layer drain a can of whole kernel sweet corn and divide the can for each pie.
Top with your mashed potatoes and bake for 15 to 20 minutes at 375.

You can be creative and change the meat to chicken and or add green beans or anything to your liking. I did add to one pie peas and also added on top of the meat a little brown or chicken gravy.

Spicy Chicken Tortillas

Today I took two chicken breast sliced in small pieces then added wok oil and buffalo chicken wing sauce a little hot but that did not kick it up the notch I wanted so I took a little package of Fire sauce from Taco bell you can add another but this one pack seem to do the extra trick. Once the chicken was fully cooked I added  a little veri veri  teriyaki sauce and kept on stirring until tender.
My one son came home and made a tortilla and I did tell him this one is hot. He added sour cream and cheddar plus mozzarella cheese and said this is really good. 
Well there you go.....

Lasagna with chopped meat

  • Today I am making lasagna with ground beef and pork (the meatloaf chopped meat).

I boiled the lasagna noodles in a very large pot adding a little salt and olive oil. Bring to a boil and place each noodle in the pot like an X so they do not lay on top of each other.Press lightly down on the noodles that are sticking up and not into the water yet. When all the noodles are in stir lightly until tender then drain the hot water and add cold water for the noodles to cool down.

 Meanwhile brown the chopped meat in a fry pan until cooked and I use the spatula to mince the meat fine. 
Take a glass lasagna pan or any pan you have to fit a three strip layer of noodles. Place on the bottom of this pan olive oil and a small layer of pasta sauce (today I used Francesco Rinaldi Original Sauce)
Take a large bowl and add 2lbs of Ricotta Cheese add spices. Sprinkle garlic powder, onion salt, Italian seasoning, parsley my dried from the garden and I also went out side a picked a small handful of fresh parsley too and  don't forget the dill  mix everything in the ricotta cheese together.

Then start your layer of 3 on the bottom of the pan top of the oil and Sauce side by side.
Small layer of Ricotta Cheese and add on top the brown chopped meat a small portion then a little of pasta sauce .
Remember we have to repeat this process on the next layer and so on until we get to the top layer.
The top layer we add pasta sauce and mozzarella shredded cheese and sprinkle Parmesan cheese or add to your individual plate.
I baked this big guy at 325 degrees for 10 to 15 minutes just to let the cheese melt and heat everything was pre-cooked.

Then add the sauce on top repeat the layers

The top just sauce, cheese bake and eat.

Chicken Parmesan

Chicken Parmesan such a quick and simple recipe. I took a package of thin chicken breast and pan fried in a little olive oil until lightly brown. Add on top of the chicken pasta sauce I used Tuttorosso sauce and sprinkled shredded mozzarella whole milk cheese on top then place into a container with a see through lid.. I do use the containers with the see through lids for my sons to see, they are a grab and go type of sons and all they have to do is microwave it.

You can do the same recipe using shrimp, eggplant, yellow squash and green zucchini or anything you love it's your choice.

Spicy Shrimp and Chicken on Brown Rice

I have brown rice made and wanted to add on top spicy shrimp and chicken.
I took eight frozen pre-cooked shrimp and put into a fry pan. I added olive oil or you can add wok oil, then put the shrimp with tails off in the pan and fried until defrosted. Add on top of the shrimp a little Hot Sauce ( I used Texas Pete Buffalo wing sauce) Then add Teriyaki Marinade sauce (I used veri veri Teriyaki by Soy Vay) This brand contains fresh garlic, ginger, sesame seeds which gives the best flavor.
Mixing the shrimp with the sauces I took out the shrimp and placed them on top of my brown rice. Then I took one piece of think chicken breast and cut into little pieces and add to the remainder of the sauce and pan fried the chicken. When the chicken was lightly browned I put the chicken on top of the brown rice next to the shrimp.
This was a simple easy recipe and has a little kick to it. You can add anything you like all seafood, chicken only or even beef or pork all to your taste.

Sweet Potato and Carrot Soup

Hey today I decided to make a Sweet Potato and Carrot Soup. I am taking anything I have in my frig to make this one.

I pealed one large sweet potato sliced and put into a stove top pot then added,
My half a bag of shredded carrots.
Two slices of red onion.
 5 of my garden cherry tomatoes.
A hand full of chopped romaine lettuce.
6 slices of can beets.
Cover with enough water to boil until tender. You can add more water during your boil if needed.

Season with Parsley and yes I still have fresh parsley growing in my Garden, Garden Dill, Onion Salt, Garlic Salt or Garlic powder, Italian spice, Sea Salt Just a sprinkle of the above seasons.

Puree when cool in a blender return to the pot add 1 or 2 Pollo chicken packets and 1 can of chicken broth.
You can add to your own soup bowl a scoop of sour cream or half and half to your taste.

Optional you can add a table spoon of cooked brown rice or cooked barley.

Boil the above until tender then blend 

Oh so good add your crackers 

Today I did add brown rice and you can add crackers of your choice to top it off.

Rotelle Pasta and Broccoli

Here we go again, I cook everyday and I do enjoy tasting food that I did not make from anyone who loves to cook too.

So today I made a short version of Cavatelli and Broccoli. Since I had a lot of broccoli and no cavatelli I used ronzoni rotelle pasta. This is a very simple and easy dish to make and you can add anything you enjoy to this dish.

Boil the Rotelle pasta until tender (I used half of the box)
Fill a fry pan with broccoli drizzle with olive oil to cook and put a lid on top of the pan, keep on stirring until tender. (I used frozen broccoli crowns to make this one easy)
1 full  head of clover Garlic diced....OOOO love my Garlic the more the flavorist..

Hey this is Halloween time keep the vampires away.

Anyway lets get back to cooking.

Lightly pan fry the garlic in the remaining olive oil (do not brown)
Mix everything together then the seasonings.

Drain Rotelle and place in a large pot, mix into the pasta saute garlic, the tender broccoli then add.....

Parsley sprinkle dried in my case I did put into fresh parsley from my garden and yes my Garden is still growing and producing in the Jersey shores of NJ.
Sprinkle a little of dill, onion salt, garlic salt, Italian seasoning, you can add or omit anything to your taste.
Pasta and Broccoli 
In your dish you can add Grated Italian Style Blend Parmesan Cheese...

Spinach Garlic Pasta with fresh garden tomatoes and onions

My garden is still producing cherry tomatoes in October at the New Jersey Shore. So today I made a Spinach Garlic Pasta which is quick and easy to do.
Fry fresh garlic, diced onions,  frozen chopped spinach and fresh cherry tomatoes in olive oil. Saute and stir until tender not to burn the garlic.
I boiled curly pasta until tender and combined in a bowl both ingredients.
Very tasty I love a lot of garlic which is the main flavor of this recipe.

Easy Bruschetta

Today we made a Quick Bruschetta using 8 slices of New York Garlic Texas Toast baked and then made the topping.
I used Hunts diced tomatoes 28oz can. 
Diced 1/2 red 1/2 yellow onion.
Diced 3/4 red pepper.
From my garden I sprinkled fresh parsley flakes, dill and a little taste of hot pepper cayenne from my garden.
Not too much hot pepper you can add but not take away.
My Bruschetta was a mild taste. I used just the tips about 1/3 of my pepper.
Sprinkled spices of onion salt, garlic powder, Italian seasoning and sea salt.
Stove top cook in a large pot, stir until tender.

Granny does not chew food and it is very hard to spoon feed her  she would turn her head  or push you away with her hand. Just like a little kid would do not to eat.  So I took one Ensure nutrition shake strawberries and cream and puree in a blender organic baby food in a pouch Oatmeal with Roasted Cinnamon Applesauce.

From my Garden to the Kitchen Septmeber 28 2011

Fresh Parsley from my Garden

My Garden is still producing the end of September at the Jersey Shore. I grew Italian flat Parsley and Curled Parsley. With only 1 plant of each parsley plant I have be given a huge harvest of parsley to cook with for the winter season. Plus I am going to mail my sister a package of parsley for her to cook with.


I washed my parsley let drain then set it outside to sundry or you can bake it to dry. Once totally dried you can blend it under your choice of chopped or fine puree.

My husky cherry tomatoes are still growing they are still flowing yellow flowers for more tomatoes this is at the Jersey Shore the end of September plus I did find one of my beneficial friends. That alien praying mantis that I hatched from the egg case. He stared at me like I was a food source and tilted his head with those alien eyes. Oh how spooked but I hatched him and I think he was so cute anyway, every year I purchase praying mantis egg cases to hatch and release into my garden to eat the bad bugs.

Outside I have containers with habanero hot pepper plants and mixed lettuce growing from seeds. I also have cayenne hot pepper growing in the front yard.

I enjoy Gardening and Cooking Fresh from my Garden and enjoy making different types of food with my veggies. My sister never tried Butternut Squash soup before and now loves it Thanks to me. Well everyone enjoy and.....

Garden Flowers September 28 2011

Impatiens flowers are still in bloom

Impatiens
This fall is still beautiful with flowers still in bloom. My Impatiens planted in a planter on my front porch. During the summer there was a leaf type plant growing with the impatiens so I pulled it out. Then later another and another so I let it be to see what type of plant this would be. Later on during the summer this plant produced a red pointed flower which I believe from the Salvia splendens vista red flower.

When the red flower grew to large for the planter I transplanted them under my mail box and today they are still in bloom end of September at the Jersey Shore.


I love nature and love to experiment with what is growing around me so I let this plant alone to grow. Happy gardening and remember.

Garden Flowers September 28 2011

Morning Glories  planted from seed years ago

Hey morning glory its 11:45 almost noon lady

One of 3 mums I planted last year which came back "Surprise"
It's the end of September at the Jersey Shore and my garden is still alive and growing. I have my morning glories I planted from seed many years ago and they still bloom. I know they love to wrap around anything they can get their vine on. My three Mums I planted last year came back that was a surprise to me I only had one come back a few years and then did not make it again. 

My veggie garden is still growing my husky cherry tomatoes and so is my parsley. Those are in my small garden and I decided not to take them out to see how long they will continue to produce. One year at the Jersey shore my tomatoes were producing the end of November.

Love my Garden and was Blessed with the large harvest I received. I am still making tomato soup and salsa sauce. 

So my I am leaving my small garden alone for the winter months to see if my parsley comes back as an experiment.
