Meat Pie with corn and mashed potatoes

Meat pie chopped meat on bottom of pie shell add corn the next layer

Top the pie with mashed potatoes then bake



I peeled a 5 lb bag of white potatoes cut and boiled until tender drain and add 2 table spoons of mayo and one table spoon of butter. With an electric blender add 1 cup milk or a little more into the potatoes and blend until creamy.
Pan fry 1 lb of chopped meat and drain the oil.
I used Mrs. Smith's two  9" deep dish pie crust and started to layer my meat pie.
On the bottom of each pie dish divide the meat into each shell.
Then add a very light sprinkle of onion salt, garlic powder, Italian seasoning and parsley flakes.
The middle layer drain a can of whole kernel sweet corn and divide the can for each pie.
Top with your mashed potatoes and bake for 15 to 20 minutes at 375.

You can be creative and change the meat to chicken and or add green beans or anything to your liking. I did add to one pie peas and also added on top of the meat a little brown or chicken gravy.

Spicy Chicken Tortillas

Today I took two chicken breast sliced in small pieces then added wok oil and buffalo chicken wing sauce a little hot but that did not kick it up the notch I wanted so I took a little package of Fire sauce from Taco bell you can add another but this one pack seem to do the extra trick. Once the chicken was fully cooked I added  a little veri veri  teriyaki sauce and kept on stirring until tender.
My one son came home and made a tortilla and I did tell him this one is hot. He added sour cream and cheddar plus mozzarella cheese and said this is really good. 
Well there you go.....

Lasagna with chopped meat

  • Today I am making lasagna with ground beef and pork (the meatloaf chopped meat).

I boiled the lasagna noodles in a very large pot adding a little salt and olive oil. Bring to a boil and place each noodle in the pot like an X so they do not lay on top of each other.Press lightly down on the noodles that are sticking up and not into the water yet. When all the noodles are in stir lightly until tender then drain the hot water and add cold water for the noodles to cool down.

 Meanwhile brown the chopped meat in a fry pan until cooked and I use the spatula to mince the meat fine. 
Take a glass lasagna pan or any pan you have to fit a three strip layer of noodles. Place on the bottom of this pan olive oil and a small layer of pasta sauce (today I used Francesco Rinaldi Original Sauce)
Take a large bowl and add 2lbs of Ricotta Cheese add spices. Sprinkle garlic powder, onion salt, Italian seasoning, parsley my dried from the garden and I also went out side a picked a small handful of fresh parsley too and  don't forget the dill  mix everything in the ricotta cheese together.

Then start your layer of 3 on the bottom of the pan top of the oil and Sauce side by side.
Small layer of Ricotta Cheese and add on top the brown chopped meat a small portion then a little of pasta sauce .
Remember we have to repeat this process on the next layer and so on until we get to the top layer.
The top layer we add pasta sauce and mozzarella shredded cheese and sprinkle Parmesan cheese or add to your individual plate.
I baked this big guy at 325 degrees for 10 to 15 minutes just to let the cheese melt and heat everything was pre-cooked.

Then add the sauce on top repeat the layers

The top just sauce, cheese bake and eat.

Chicken Parmesan

Chicken Parmesan such a quick and simple recipe. I took a package of thin chicken breast and pan fried in a little olive oil until lightly brown. Add on top of the chicken pasta sauce I used Tuttorosso sauce and sprinkled shredded mozzarella whole milk cheese on top then place into a container with a see through lid.. I do use the containers with the see through lids for my sons to see, they are a grab and go type of sons and all they have to do is microwave it.

This finished product after heating to melt the cheese and I ate this one
You can do the same recipe using shrimp, eggplant, yellow squash and green zucchini or anything you love it's your choice.

Spicy Shrimp and Chicken on Brown Rice

I have brown rice made and wanted to add on top spicy shrimp and chicken.
I took eight frozen pre-cooked shrimp and put into a fry pan. I added olive oil or you can add wok oil, then put the shrimp with tails off in the pan and fried until defrosted. Add on top of the shrimp a little Hot Sauce ( I used Texas Pete Buffalo wing sauce) Then add Teriyaki Marinade sauce (I used veri veri Teriyaki by Soy Vay) This brand contains fresh garlic, ginger, sesame seeds which gives the best flavor.
Mixing the shrimp with the sauces I took out the shrimp and placed them on top of my brown rice. Then I took one piece of think chicken breast and cut into little pieces and add to the remainder of the sauce and pan fried the chicken. When the chicken was lightly browned I put the chicken on top of the brown rice next to the shrimp.
This was a simple easy recipe and has a little kick to it. You can add anything you like all seafood, chicken only or even beef or pork all to your taste.

Sweet Potato and Carrot Soup

Hey today I decided to make a Sweet Potato and Carrot Soup. I am taking anything I have in my frig to make this one.

I pealed one large sweet potato sliced and put into a stove top pot then added,
My half a bag of shredded carrots.
Two slices of red onion.
 5 of my garden cherry tomatoes.
A hand full of chopped romaine lettuce.
6 slices of can beets.
Cover with enough water to boil until tender. You can add more water during your boil if needed.

Season with Parsley and yes I still have fresh parsley growing in my Garden, Garden Dill, Onion Salt, Garlic Salt or Garlic powder, Italian spice, Sea Salt Just a sprinkle of the above seasons.

Puree when cool in a blender return to the pot add 1 or 2 Pollo chicken packets and 1 can of chicken broth.
You can add to your own soup bowl a scoop of sour cream or half and half to your taste.

Optional you can add a table spoon of cooked brown rice or cooked barley.

Boil the above until tender then blend 

Oh so good add your crackers 

Today I did add brown rice and you can add crackers of your choice to top it off.

Rotelle Pasta and Broccoli

Here we go again, I cook everyday and I do enjoy tasting food that I did not make from anyone who loves to cook too.

So today I made a short version of Cavatelli and Broccoli. Since I had a lot of broccoli and no cavatelli I used ronzoni rotelle pasta. This is a very simple and easy dish to make and you can add anything you enjoy to this dish.

Boil the Rotelle pasta until tender (I used half of the box)
Fill a fry pan with broccoli drizzle with olive oil to cook and put a lid on top of the pan, keep on stirring until tender. (I used frozen broccoli crowns to make this one easy)
1 full  head of clover Garlic diced....OOOO love my Garlic the more the flavorist..

Hey this is Halloween time keep the vampires away.

Anyway lets get back to cooking.

Lightly pan fry the garlic in the remaining olive oil (do not brown)
Mix everything together then the seasonings.

Drain Rotelle and place in a large pot, mix into the pasta saute garlic, the tender broccoli then add.....

Parsley sprinkle dried in my case I did put into fresh parsley from my garden and yes my Garden is still growing and producing in the Jersey shores of NJ.
Sprinkle a little of dill, onion salt, garlic salt, Italian seasoning, you can add or omit anything to your taste.
Pasta and Broccoli 
In your dish you can add Grated Italian Style Blend Parmesan Cheese...

Spinach Garlic Pasta with fresh garden tomatoes and onions

My garden is still producing cherry tomatoes in October at the New Jersey Shore. So today I made a Spinach Garlic Pasta which is quick and easy to do.
Fry fresh garlic, diced onions,  frozen chopped spinach and fresh cherry tomatoes in olive oil. Saute and stir until tender not to burn the garlic.
I boiled curly pasta until tender and combined in a bowl both ingredients.
Very tasty I love a lot of garlic which is the main flavor of this recipe.

Easy Bruschetta

Today we made a Quick Bruschetta using 8 slices of New York Garlic Texas Toast baked and then made the topping.
I used Hunts diced tomatoes 28oz can. 
Diced 1/2 red 1/2 yellow onion.
Diced 3/4 red pepper.
From my garden I sprinkled fresh parsley flakes, dill and a little taste of hot pepper cayenne from my garden.
Not too much hot pepper you can add but not take away.
My Bruschetta was a mild taste. I used just the tips about 1/3 of my pepper.
Sprinkled spices of onion salt, garlic powder, Italian seasoning and sea salt.
Stove top cook in a large pot, stir until tender.

Recipe's for granny with alzheimers

Drink for Granny


Granny does not chew food and it is very hard to spoon feed her  she would turn her head  or push you away with her hand. Just like a little kid would do not to eat.  So I took one Ensure nutrition shake strawberries and cream and puree in a blender organic baby food in a pouch Oatmeal with Roasted Cinnamon Applesauce.
