Pasta Fagioli and side dish steamed string beans

Pasta Fagioli

Steamed string beans
My sister loves Pasta Fagioli and I have never made this one before so I decided to surprise her when she comes home from work.
There are so many ways to make Pasta Fagioli and I did not have all the ingredients in my house so I took anything that I had in the Frig and Pantry to try to pull this baby off. So here we go.

1 teaspoon minced garlic
1 can white Cannellini Beans
2 cans Veggie or Chicken Broth
1 can of Tomato Soup that was all I had and I added 2 table spoons of Ragu Pasta sauce for flavor and to make it red. (You can use tomato sauce and tomato paste or even V-8 Juice and add 1 can of diced tomatoes, whatever you have around)
1/2 diced small red pepper
Diced small 6 baby carrots and 1 stick of celery diced.
Diced 1/2 onion
2 tablespoons olive oil
1/2 cup Ronzoni Ditalini Pasta

Fry onions, red peppers, carrots and celery in 2 tablespoons olive oil until slightly tender stir frequently in a large stove pot.
Add 4 to 6 cups of water and bring to a boil.
Reduce heat to medium boil add 1 cup Ditalini Pasta stir frequently until tender.
Add a sprinkle of Mrs Dash Original, parsley and dill.
1 or 2 packets of Goya Pollo chicken seasoning. 

Add your tomato sauce, soup, 2 tablespoons Ragu Pasta Sauce, V-8 whatever you have.
Add your chicken or veggie broth.
When the pasta is tender let the pot cool and add (do not drain) 1 can of Cannellini Beans mix and eat.

Salt and pepper optional. You can also add meat to the Pasta Fagioli, Diced Chicken, Diced Ham, Diced Turkey any meat you like.


On the side I made a simple and quick saute string beans. Wash and cut both ends of the bean and steam until slightly tender (do not over steam) Slice a few red onion in slivers raw add to the beans in a bowl. Drizzle red wine vinegar just to coat the bottom of the bowl and mix. Let cool down and your ready to go.
Fresh String Beans, Red Onion and Red Wine Vinegar.

Chicken Marsala by Aunt Rene









In her special pan General Electric Model 1SK50CAS 2434 company is out of business see the pan photo


3 pounds of frozen chicken breast.
Slice chicken thin 1/4 inch. long
dipping  the pieces of chicken in the egg and flour the chicken

Brown in olive oil using a deep pan (you can also cut the pieces of brown chicken smaller if you like)
Add small sliced 1/2 Carrot
Dice
1/2 Celery Stick
1 small onion
Little of garlic (optional)
Little of leak or scallion (optional)
Add
Fresh Parsley and Dill
1 or 2 cans chicken broth
2 packets of Chicken Pollo (powder broth)
Mrs Dash Original sprinkle to your taste
2 Packs of Fresh Shitake Mushrooms (take out the stems)
Little salt and pepper

1/4 cup Holland House Marsala Cooking Wine (add when the above boils)

Cook in electric pan until boiling  then add 1/2 cup marsala cooking wine (Holland House)
Thicken sauce with a little flour if needed

You can add beef, veal, or Just Veggies this is all up to your taste. So remember.
