Chicken Fayita Wrap

Pan Fry both sides of chicken then add the Fajita seasoning mix

Today I made a quick and easy Chicken Fajita Wrap for my family. Pan fry thin chicken breast both sides. Then add the fajita seasoning mix with water as directed. (I like Old El Paso) 
Wet lightly both side of Fajita Style tortillas. Dice or slice the cooked chicken and place on the tortilla with shredded cheddar cheese. In the microwave melt the cheese remove and top with lettuce and sour cream.

You can add any toppings you like this is how my son wanted it so Remember.

Homemade Chicken Soup


Everyone loves homemade Chicken Soup and especially when the weather is wet and damp.

So today I purchased 1 package of split chicken breast with the rib.
Boiled both pieces until the meat is white.
Take the breast out of the water stock to cool and strain the water stock top with a hand strainer.
Chop a few 4 sticks celery and leaves and place into the stock.

But I did change my chicken soup and added, well are you ready.
Diced 2 cloves of fresh garlic.
Dice 1/2 peeled of sweet potato.
Dice 1 peeled Macintosh apple.
Dice baby carrots, celery and onions 3/4 cups of each.
Add 1 tea spoon of crushed garlic from a jar.

Pan fry everything above lightly in 2 table spoons of olive oil until a little tender stir frequently do not over fry then add to the water stock.



Saute Carrots, Onions.Celery in olive oil 



Boil the the stove pot stock add your veggies, hand shred the chicken breast in small pieces return to the stock. Add 1/2 teaspoon of minced garlic to the pot.

After boiling add one or two cans of chicken broth, 2 or 3 packs of Goya chicken powder pollo, sprinkle a little of dill, parsley, little salt and Mrs. Dash.
Chicken Soup
This one with the sweet potato and apple was more flavorful than my original Chicken Soup and you can add a hand full of egg noodles or pasta bows.

Chicken Parmesan

This is a quick and easy dish to make.

1 package very thin chicken breast
seasoned bread crumbs
pasta sauce, I use Tuttorosso traditional
mozzarella shredded cheese

In a fry pan I use olive oil and coat the pan
I take each breast and rinse under cold water shake the extra water and then I bread the chicken.
Using just water with the bread crumbs stay on the chicken without using eggs
(I do not use eggs why waste them)
Fry each side until the chicken is cooked.

For the Parmesan just coat the top with pasta sauce and sprinkle cheese.
You can microwave until the cheese melts.
Sprinkle with Parmesan cheese.

My kids like anything ready to eat.
If you have someone that can not eat red sauce you can use Alfredo sauce and as far as cheese
you can use shredded cheese on both types of sauce.

Chicken Parmesan

This is a quick and easy dish to make.

1 package very thin chicken breast
Tuttorosso pasta sauce traditional
Seasoned bread crumbs
Shredded Mozzarella

In a frying pan coat with olive oil
Take one piece of chicken run under cold water shake off the extra water.
Bread both sides of the chicken place into the pan and repeat each chicken slice

I do not use an egg not to waste it and the water will keep the bread crumbs to stick.
Cook both sides lightly in the pan.
Coat the top of the chicken with pasta sauce and sprinkle with shredded mozzarella
Microwave until the cheese melts
Sprinkle with Parmesan cheese

My kids love to heat and eat and this is a very easy recipe

If you can not have the red sauce you can use Alfredo cheese sauce instead of the red sauce and if you like you can use shredded cheddar cheese or any other shredded cheese of your choice.

From my Garden to the Kitchen My Garden 2011

Every year we plant a Organic Garden mostly with husky cherry tomatoes. (ooooo sooooo good)
We already picked some of the Veggies, zucchini, Japanese eggplant, yellow squash, parsley and dill.
So we decided to make a comfy warm soup with navy beans.
Ingredient's
Half bag of Goya Navy Beans, peeled baby carrots, zucchini, japanese eggplant, yellow squash sliced unpeeled, Diced half red and yellow onions, fresh parsley and dill, 1 can college inn chicken broth, 2 packs of goya polo, 2 cups of V-8 veggie juice. Stove top in a soup pot until beans and veggies are tender. Enjoy

From my Garden to the Kitchen Veggie and Chicken

Getting back to the Kitchen I have taken my zucchini and yellow squash washed and sliced them. I placed them into a glass baking pan lined with foil and olive oil. I also added fresh garlic cloves, tiny pealed carrots and one whole onion, I did kick it up and added sugar snap peas just bake until veggies are tender. I do cover the glass pan with foil to keep in the juices.
So today having my veggies baking I also have breaded chicken along side baking together. On the side I did make pasta and this lunch meal is oh so good.

From my Kitchen to my Garden, growing plants from seeds

Well it's this time of the year February 2012 winter in N.J. This has been a very mild winter for the Jersey Shore we only had a little dusting of snow.  I love my Garden and want to plant now.

So I am giving back to my garden from the crops I grew last summer which I saved the seeds and now growing indoors.

This is the reverse of From my Garden to the Kitchen. Which is now From my Kitchen to my Garden.

I am growing indoors next to my sunny window. Butternut Squash, Tomatoes, Assorted Peppers
and today we planted Chives.

Avocado plant I grew from the seed
I read up on how to start the Avocado seed using toothpick and putting the seed in a glass of water.
Well that did not happen you have to change the water and that seed did not grow.

So I took the seed by my own hands and planted it into my garden soil and it grew all on its own. I took out the plant from my garden before the winter months and planted it in a container with potting soil and this is what you see. My Avocado plant indoors.

I did grown two more in my garden last summer and did not dig them out of the garden as an experiment to see if they could endure the winter Let you know in the summer if they are going to grow.

I will order Praying Mantis Egg Cases to hatch in my sunny window to release into my garden which I do every year. They are beneficial bugs that eat the bad bugs in your garden.

Broccoli rabe









I made an easy Broccoli Rabe. This is a bitter veggie but we can spice it up a bit so here we go.


I diced 3 cloves of fresh garlic.  Saute in olive oil until a little tender do not over brown them and sprinkle  crushed peppers to taste. Take out the garlic an place in a large bowl.


Take the broccoli rabe wash and cut off the stems and steam them with a sprinkle/shake of garlic salt, garlic powder, parsley, dill, Mrs. Dash and salt..
Steam until tender then.
.
Add the broccoli rabe into the pan we used with the diced fresh garlic saute we took out and place into the bowl just saute the rabe until tender.


In a bowl mix everything together I also added a table spoon of crushed garlic. 


(I love a LOT of garlic)


This will take out the bitter taste of the rabe.


 You can soak the fresh broccoli rabe in chicken broth and or chicken pollo broth and then start from the above cooking.


I would try adding to this broccoli rabe a little spinach steamed and a little string beans steamed. This is up to your taste.
